Both githyanki and yuan-ti are closed content (not in the SRD), so they aren't provided with PCGen. If you head over to the LST file help group, or the forum, we can help you with writing them up. You should probably approach it as "how do I do <task>?" or "how do I write up an ability that does <thing>?" rather than "How do I write up the <closed-content race>?", just to avoid any potential closed-content troubles.
The documentation has some LST file classes ("classes" as in going to school, not character classes), and there are some videos out there, too, to help you get started.
